What is meant by selectable stocks?

Stocks produce a mixture of single and double flowered plants. With a selectable variety it is possible to identify the double flowered plants.

Once the seedlings appear reducing the temperature to 5ºC (40ºF) will result in a change of colour in the seed leaves. The dark green plants will result in single flowered plants and the seedlings with lighter seed leaves will produce double flowered plants.
